有營焗薯 Baked Potatoes with Eggs01

回港在即,要把雪櫃中的剩餘物資掃光。覺得炒飯就最好不過。雖然家中有一個飯王,無飯不歡。但….突然不想吃飯,於是焗了兩個『有營』馬鈴薯——有營養兼有造形。吃起來感覺不錯。雖然工序多了些,其實做也不難,只要吃得開心,不用計較。吃的時候,飯王不覺得是隨便從雪櫃找出來的東西。若有香草,灑些在上面裝飾,跟餐廳級的菜式很近呢。對嗎?且看飯王吃得滋味,就知道下次要做多些份量啊。

有營焗薯

準備時間: 25分鐘
烹調時間: 60 分鐘
分量: 2 人

材料:

  • 馬鈴薯 2個 約690克
  • 蛋黃醬(mayonnaise) 2湯匙
  • 全熟雞蛋 1隻
  • 煙肉(培根 bacon,切粒) 1片
  • 青豆(新鮮或急凍) 2湯匙
  • 牛油(奶油,切粒) 1至2湯匙
焗薯製作圖 Baked Potato Procedures

做法:

  1. 先把馬鈴薯洗淨,抹乾水分。用叉在表面刺數下。表面掃上少許油和灑少許鹽。用鋁箔紙包裹,置在焗盤上。放入已預熱至180C/356F的焗爐中,焗熟至軟身,約60分鐘。
  2. 拿出焗爐,丟去鋁箔紙,稍放涼。直切開半,用大匙刮出馬鈴薯肉。放入篩子中,用大匙壓過篩,令馬鈴薯肉更幼滑。(註:如想吃有質感的,此步可省略。)把刮空的薯皮,再放入焗爐,焗約10分鐘,至微黃及微脆。
  3. 青豆用滾水煮兩分鐘,撈起瀝乾水分,冲凍水。灑少許鹽調味。待用。熟雞蛋刮出蛋黃。蛋白切粒。蛋黃放入篩子,用匙羹壓過篩,成綿滑的粉末狀。煙肉下熱鑊,略炒香後,備用。
  4. 趁馬鈴薯肉還熱,加入牛油拌勻。然後拌入青豆,蛋白粒,煙肉,蛋黃醬。灑少許鹽和胡椒粉調味。分別釀入薯皮殼中。灑下蛋黃碎,即成。
